About the triple A bourbon coffee trilogy

Although native to Africa for over a century the Bourbon varietal has flourished in several coffee producing countries in the Americas.

Bourbon Coffee,” is a varietal of Arabica Coffee beans. Originated in Rwanda as a wild crop. Bourbon beans are known for their deep, buttery texture, as well as their sweetness and very light fruit overtones.

Bourbon coffee was first introduced to the Americas around 1860 to southern Brazil near Campinas, north west of Sao Pablo. Subsequently the varietal made its way to Colombia.

Our team of roasters and cuppers have selected three very unique bourbon mutations originated in the Huila region, central-south-west area of Colombia. This trilogy is about showcasing the uniqueness and elegance of Colombian Bourbons and why they are becoming a Colombian signature in the world of specialty coffee.

Stripe Bourbon

Extended fermentation process.

Grown by Rafael Amaya in farm “La Virginia” located in Timana Huila.

Harvested following strict ripeness criteria. Hand sorted and then exposed to dry fermentation for a period of 60 hours. The cherries are subsequently pulped and dried on raised beds until optimal moisture content in reached.

Flavour Profile: Velvet floral fragrance, notes of peach with a sweet-citrusy edge. Perfectly balanced mild acidity.

Omni-Roast

Pink bourbon

Natural lactic and doble anaerobic fermentation.

In our opinion, the star of this trilogy.

Grown by Jairo Arcila in farm “Villarazo”. Exposed to dry anaerobic fermentation for 24 hours at 22 degrees Celsius. Then placed inside grainpro bags for 34 hours controlling its temperature in water tanks. After this the coffee is then placed inside plastic barrels without oxygen for 40 hours. Finally is allowed to reach ideal moisture content on raised beds.

Flavour Profile: Sweet-floral with a distinctive notes of apricot and cola.

Chilli Bourbon

From coffee farm “Villa Betulia” grown by Luis Anibal Calderon.

Exposed to a dry fermentation period of 15 hours before pulped, then dried on raised beds till achieved ideal moisture content.

Flavour Profile: Well balanced acidity, red fruits, floral with a sweet toffee finish.

About the packaging - A taste of Colombian traditions.

The “Yipao Parade” is a folkloric celebration that takes place in Armenia.

Jeeps (Willys model) are very popular among Colombian coffee farmers who saw in this vehicle the needed qualities for the difficult roads in the mountainous region of the country. Besides the transportation of coffee, Jeeps are used to transport many other agricultural products.

These vehicles are also called “Mechanical Mules” within the farmers industry.
