Blackberry Honey Process · Wine Yeast Fermentation
A vibrant, juicy coffee grown in the volcanic soils of Armenia, Quindío, and crafted through a meticulous honey process. Only the ripest cherries were handpicked and transported to the processing plant in sealed bags to preserve their freshness. Upon arrival, they were floated to remove imperfections, using water that is fully recycled and naturally filtered through vetiver beds to ensure an environmentally friendly process. The cherries then underwent a 72-hour dry anaerobic fermentation with the pulp on, during which fresh blackberries and wine yeast were added. The blackberries infused the cherries with deep, jammy fruit character, while the wine yeast enhanced aromatic complexity—creating a vibrant, layered profile bursting with ripe blackberry and wine-like nuances.
