Watermelon Process - A Fresh Take on Fermentation
This limited seasonal lot starts with only the ripest cherries, carefully selected.
There, the cherries undergo a 48-hour dry anaerobic fermentation, where fresh watermelon is introduced into the tanks. This process brings a juicy, refreshing sweetness to the coffee, enhancing its natural fruit character.
After fermentation, the coffee is washed and slowly dried to achieve the perfect balance in the cup.
The result is a vibrant and playful profile, with notes sweet watermelon with fresh mint, a touch of raspberries, and a smooth chocolate finish.
